Chicken Fajita Soup

I absolutely love Chicken Fajita Soup and found a beanless version that is a copycat of outback steakhouses here.

2 tsps Olive Oil
1 Medium Onion, Chopped
6 Garlic Cloves, Minced
1 Jalapeno Pepper, Chopped
1 Green Pepper, Chopped
4 Small Boneless Skinless Chicken Breasts
16 oz Frozen Corn
1/2 Cup Water
2 tsps Cumin
1 tsp Chili Powder
1/2 tsp Cayenne Pepper
52 oz Chicken Broth
1 14oz Can Diced Tomatoes
2 8oz Cans Tomato Sauce

1. Saute Onion, Green Pepper, Jalapeno, and Garlic in pan.
2. Boil Chicken in separate pot for 15 minutes.
3. At the same time add the rest of ingredients to another pot and bring to boil.
4. After fifteen minutes shred chicken and add to rest of ingredients.
5. Simmer all for 45 minutes.
